Smoked a chicken.

I smoked a chicken recently. Spatchcocked it, applied Simon & Garfunkel rub, into the smoker, and finished on the grill to crisp the skin up.

It was marvellous, as was the smoked potato salad and grilled asparagus.

Smoked chicken

It’s the Labour Day long weekend here and I smoked a whole chicken. It was a big bird, a little over 8 pounds (3.5 kilos). I butterflied the bird, used a dry rub, went light on the smoke. It turned out not too bad.

Smokin’

I’m spending the afternoon minding the smoker. Skinless bone-in chicken breasts with a rub, potatoes, marinated tofu. Rubbed pork ribs lurk underneath. Yum.
