Let there be brisket

I had the idea to smoke a beef brisket this weekend. So I ordered one up from our local meat packer, which buys its fresh meat from sources within a 100 mile radius. Opened the package yesterday and discovered that it will not all fit in the smoker. Here you see 1/2 of it, about five lbs. Rinsed and patted dry, a little salt and pepper sprinkled on it, coming up to room temperature. Now, off to start the smoker.

Stella ensures that the White-tailed Rabbit stays away from the vegetable garden. Fifteen minutes after first sighting Roger (or Rosie as the case may be) she is still on watch. Very little slips by Stella unobserved.

Faye learned about a farm that seemed to have a small herd of Longhorn cattle. A bit of research and driving around confirmed it and led to this photograph of an iconic image of Texas.

This little sparrow, species unknown, was so interested in gaining a better look at its reflection in the glass door that it perched on the handle. I stood, invisible, only a few inches away, to capture it.

Taken in April 2005 on Mount Bonnell in Austin with my beloved Labx Moonpie. Faye and I had met only a day or three before yet I was wondering, thinking, that we had a great deal in common beyond a love of and for dogs. It was a happy time, showing my guest my version of Austin. A happy time, the best time for me in several years.

It’s still a happy, good time. I never expected life to lead me to getting married, moving to Canada, becoming Canadian. Regret none if all that’s transpired and would do it all again in a heartbeat. Thank you sweetie.
